who on earth is using Ubuntu as a server at the enterprise level? at the mid-size business level even?

well, good luck to them on that. but for me and just about every tech/admin I know of, if we want a debian based server, we use Debian. Accept no substitute, you will regret it. ( in terms of debian based servers)
